Heavenly Chocolate Peanut Butter Balls

Ingredients:

1 (16 Oz) container peanut butter

3/4-cup butter softened

3/4-cup brown sugar

3 3/4 cup powdered sugar

12 Oz chocolate chips, melted

 Prep time:

20 minutes

 Method:

Mix the peanut butter, butter, brown sugar and powdered sugar together. Roll into 1-inch balls (not any larger). Stick the dough into the refrigerator until cool.  Next dip them into the melted chocolate. Set the chocolate-coated ball onto wax paper and cool. Keep in the refrigerator until you are ready to eat them!

These easy peanut butter balls are great frozen as well! All you need to do is put them in a Ziploc bag and freeze them

Healthy zucchini roll-ups

Ingredients:

  • 3 small zucchini (about 1/2 pound each), cut lengthwise into 1/4-inch-thick slices
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt, plus more to taste
  • 1/16 teaspoon of freshly ground black pepper, plus more to taste
  • 1 1/2 ounces fresh goat cheese
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon fresh lemon juice
  • 2 ounces bagged baby spinach (2 cups lightly packed)

1/3-cup basil leaves

 Prep Time:

1 Hour

Method:

1. Preheat grill or grill pan to medium.

2. Discard the outermost slices of zucchini; brush the rest with oil on both sides. Sprinkle the zucchini slices with salt and pepper. Grill until tender, about 4 minutes per side. You can prepare the zucchini a day ahead and store it in an airtight container in the refrigerator.

3. In a small bowl, combine the goat cheese, parsley, and lemon juice, mashing together with a fork.

4. Put 1/2 teaspoon of the cheese mixture about 1/2 inch from the end of a zucchini slice. Top with a few spinach leaves and a small (or half of a large) basil leaf. Roll up and place seam side down on a platter. Repeat with remaining zucchini slices. You can make these up to a day in advance; store in an airtight container in the refrigerator.

These healthy zucchini roll-ups are great to bring to class with you in order to stay energized and be healthy. It is best to prepare these the night before and store them in your fridge to grab them when your rushed the next morning.

Adult Capri suns- Vodka Lemonade

Ingredients

  • 1 cup sugar
  • 1/3 cup water, plus 8 cups
  • 4 lemons, juiced
  • Vodka
  • Ice cubes

 Prep time:

10 Minutes

Directions

In a saucepan, combine the sugar and 1/3-cup water and place over medium heat. Bring the mixture to a boil, and then cook the sugar until dissolved but the syrup is still clear. Do not cook the sugar until it starts to turn color. Remove from heat and cool.

In a pitcher, combine the syrup, 8 cups water, the lemon juice, vodka and ice and stir to combine. Pour into tall glasses and enjoy!

This is great to conceal your slight alcohol problem (just kidding), and makes for great party drinks.
