Quick and Easy Tortellini and Spinach Soup

Ingredients: 

– 1 Box of chicken stock
– Fresh cheese tortellini
– Bagged baby spinach
– Parmesan cheese

Prep Time: 

30 Minutes

Method: 

-Bring 4 cups of stock and 1 cup of water to a boil in a large saucepan

-Reduce heat, add a 9-ounce package of tortellini, and simmer until pasta is tender, about 6 minutes

-Stir in a 6-ounce package of baby spinach and cook until just wilted.

Season with salt and pepper to taste. Ladle soup into 4 bowls, and shave or grate Parmesan over top

This delicious tortellini soup is healthy and very easy to make if you are in a rush. It serves four.

Sunday dinner with the roomies

 Ingredients:

  • Flour milk eggs – for the yorkshire puddings
  • Potatoes butter and milk – for the mash potatoes
  • Chicken breasts
  • Carrots
  • Stuffing mix and boiling water
  • Cabbage
  • Broccoli

 Prep Time: 40 Minutes

 Method:

For Yorkshire pudding

1- mix 2 eggs up and pour into a jug

2-add the same amount of milk and flour whisk till thick but not lumpy

3-heat oil up in pudding trays in oven then watch for them to rise !

4-cook the carrots 
boil the potatoes till soft then mash with butter and milk till creamy, cook broccoli and cabbage in pans

5-Cook chicken breast in a frying pan with oil

This recipe is great for a relaxing Sunday evening with the roomies.

All Nighter- Shrimp Salad

Ingredients:

–  1 cup pre cooked shrimp

–  2 cups pasta

–  2 buds of garlic

–  3 tbsp. butter

Directions:

Turn the stove burner on to the 6th mark fill a pot with water and wait until it boils.  To make sure the noodles don’t stick, add a tbsp. of butter to the water. Once boiling add the pasta and stir for 10 minutes or until it is cooked. When cooked drain the water from the noodles.

On a separate burner on the stove put a small pot and turn the dial to the 4th mark. Take your garlic and chop it into fine pieces then add it to the pot along with 2 tbsp. of butter. Once it is melted remove from the stove. This is your sauce for the cooked noodles.

If your shrimp is already thawed simple combine it with the drained pasta noodles and then pour the garlic sauce on top. If your shrimp isn’t already thawed put it in a bowl and run warm water over it for 2 min then combine with the noodles and garlic sauce.
