Heavenly Chocolate Peanut Butter Balls

Ingredients:

1 (16 Oz) container peanut butter

3/4-cup butter softened

3/4-cup brown sugar

3 3/4 cup powdered sugar

12 Oz chocolate chips, melted

 Prep time:

20 minutes

 Method:

Mix the peanut butter, butter, brown sugar and powdered sugar together. Roll into 1-inch balls (not any larger). Stick the dough into the refrigerator until cool.  Next dip them into the melted chocolate. Set the chocolate-coated ball onto wax paper and cool. Keep in the refrigerator until you are ready to eat them!

These easy peanut butter balls are great frozen as well! All you need to do is put them in a Ziploc bag and freeze them

Healthy zucchini roll-ups

Ingredients:

  • 3 small zucchini (about 1/2 pound each), cut lengthwise into 1/4-inch-thick slices
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt, plus more to taste
  • 1/16 teaspoon of freshly ground black pepper, plus more to taste
  • 1 1/2 ounces fresh goat cheese
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon fresh lemon juice
  • 2 ounces bagged baby spinach (2 cups lightly packed)

1/3-cup basil leaves

 Prep Time:

1 Hour

Method:

1. Preheat grill or grill pan to medium.

2. Discard the outermost slices of zucchini; brush the rest with oil on both sides. Sprinkle the zucchini slices with salt and pepper. Grill until tender, about 4 minutes per side. You can prepare the zucchini a day ahead and store it in an airtight container in the refrigerator.

3. In a small bowl, combine the goat cheese, parsley, and lemon juice, mashing together with a fork.

4. Put 1/2 teaspoon of the cheese mixture about 1/2 inch from the end of a zucchini slice. Top with a few spinach leaves and a small (or half of a large) basil leaf. Roll up and place seam side down on a platter. Repeat with remaining zucchini slices. You can make these up to a day in advance; store in an airtight container in the refrigerator.

These healthy zucchini roll-ups are great to bring to class with you in order to stay energized and be healthy. It is best to prepare these the night before and store them in your fridge to grab them when your rushed the next morning.

Rainbow Gingerale

Ingredients: 

-1 Tray for ice cubes

– 3 packs of different coloured kool-aid

-Water

– A few bottles of gingerale (depending on how many people you are serving)

Prep time:

Over night

Method:

– Mix kool-aid and water in a bowl ( do different kool-aid colours separately)

– Pour into trays, let freeze over night

– Fill tall glasses up with the assorted cube colours and fill with gingerale

This awesome colourful drink is great for study sessions with your classmates at home.

 

Frozen strawberry delights of heaven

 Ingredients:

-Strawberries

– Semi sweet chocolate Squares

-Fine sugar

 Prep Time: 15 minutes

Method:

1- Freeze the strawberries for around 10 minutes

2- During that time melt chocolate into a small sauce pan with butter

2- Take out the strawberries and coat with sugar

Dip the strawberries into the melted chocolate

 This recipe is great for when you’re having a few friends over for a pre- drink before the big night out 

The 2am Meltdown-Grilled cheese with bacon

 Ingredients:

–  2 pieces of bread

–  1 tbsp. of butter

–  2 slices of cheese

–  4 strips of bacon

–  Cooking spray

Directions:

Precook bacon in the microwave for 4 minutes, flip bacon after 2.  If more cooking is needed place back in the microwave for additional time.

Turn your oven burner to the 6th mark.  As it’s heating take a pan or skillet and spray the inside with cooking spray so the bread wont stick. Butter all sides of your bread slices then place the cheese and bacon on one piece of bread. Take the remaining bread slice and place it on the top like a sandwich.  Grill both sides evenly till golden brown.

 Prep Time: 15 min

The quick and delicious onion rings

Onion rings

Ingredients:

– A cup of self-raising flour

– Warm/cold water

– Pinch of salt and pepper

– An onion

– A wok of oil (pre-heated)

Prep Time: 15 Minutes

Method:

1-Firstly take the cup of self raising flour and mix it with warm/cold water until the consistency is runny but not too runny.

2-Then add the salt and pepper

3-cut the onion into rings

dip the onions into the mixture

deep fry them until crispy and brown

This recipe is great when having a study sesh at your place with some classmates. It’s quick, easy and delicious.
